Salmon Cakes from Lisa and Mary Katherine

2013-01-19 13.16.19Lisa texted me this pic of her dinner the other night! You go girl!  She used almond flour instead of bread crumbs for the salmon cakes and ate with a side of broccoli.  If you haven’t tried Salmon cakes, you need to!  Here’s a quick and easy last minute, I-forgot-to-plan idea.  You need:

  • almond flour
  • canned salmon
  • 1-2 eggs beaten
  • salt & pepper
  • diced scallions (optional)
  • cilantro (optional)
  • dill (optional)

Mix all ingredients in a bowl, form into patties, and saute in olive oil til cooked.  yummy.
