Kristi’s Shrimp

2013-01-19 13.14.08ok, here’s a really easy one, using some frozen shrimp and whatever veggies you have on hand.  A simple stir-fry in a black iron skillet.  Here’s what you need:

  • frozen shrimp
  • olive oil
  • fresh rosemary (or herb of your choice)
  • garlic
  • purple onion
  • bell pepper
  • sweet potato
  • any other veggies you want to add

Saute the veggies that will take longer to cook.  I started with the onion and sweet potato (peeled and sliced thinly), then added the pepper and shrimp for the last few minutes.  really good.
