Buffalo Chicken Salad

This recipe is from the cookbook, Primal Cravings: Your Favorite Foods Made Paleo

1.5 lbs of chicken breast

2 celery stalks, chopped, plus 1 cup diced

1/2 yellow onion, chopped

1/2 cup mayonnaise from the cookbook above.

1/4 hot sauce

salt to taste

1. place chicken breasts in a pot.  add enough water to cover the chicken.  add chopped celery with onion and salt. Bring to a simmer and cook for 10 min.

2. turn off heat and allow the chicken to continue to cook for 10-15 min. in the hot water.  check to ensure the chicken is cooked through and shred when cool enough to handle.

3. in a mixing bowl, add mayo, hot sauce, diced celery, and shredded chicken.  mix to combine.
