don’t want to think? eat what I’m eating for lunch today. brainless. healthy. easy. I have it for lunch and sometimes dinner several times a week, and it’s easy to change up- – Chicken over salad greens with veggies and nut of your choice. Last night I cooked a dish of chicken breasts in the oven to be ready to grab and add to whatever this week when I need a protein. I sliced the chicken over greens, added cukes, sweet bell peppers, and pecans. (but add salmon or steak instead, and change up the veggies and nuts for a different taste)…oh yeah, and my favorite homemade dressing by Emeril Lagasse – which is now added under the Food Ideas section, along with a couple new recipes I added for Pumpkin muffins and Coconut Shrimp over Basil Spinach.
